Ingredients
- 2 large eggs
- ¼ cup diced onion
- ¼ cup diced tomato
- ¼ cup diced bell pepper
- 1 green chili, finely chopped (optional)
- ¼ tbsp green chili, finely chopped (optional)
- ¼ tbsp turmeric powder
- ¼ tbsp red chili powder
- ¼ tbsp cumin powder
- Salt, to taste
- 1 tbsp cooking oil
- Fresh cilantro leaves, chopped (for garnish)
Instructions
- In a mixing bowl, whisk 2 eggs until they are frothy.
- Add 1/4 cup each of diced onion, tomato, and bell pepper to the eggs.
- Add 1 finely chopped green chili (optional), 1/4 teaspoon each of turmeric powder, red chili powder, and cumin powder, and salt to taste.
- Mix everything together until well combined.
- Heat 1 tablespoon of cooking oil in a non-stick skillet or frying pan over medium-high heat.
- Once the oil is hot, pour the egg mixture into the pan.
- Spread the mixture evenly using a spatula.
- Cook the omelet for 2-3 minutes or until the bottom is golden brown and the top is set.
- Using a spatula, carefully flip the omelet over and cook the other side for an additional 1-2 minutes or until cooked through.
- Once the omelet is cooked, transfer it to a plate and garnish with fresh chopped cilantro leaves.
- Serve hot with slices of bread or roti, if desired.
Notes
You can adjust the spice level as per your preference by adding or reducing the amount of green chili and red chili powder. You can also add other vegetables such as spinach or mushrooms to the omelet if you like.
