Ingredients

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a mixing bowl, whisk together the flour and salt for the crust. Add the cubed butter and use a pastry cutter or fork to cut the butter into the flour mixture until the mixture resembles coarse crumbs.
  • Gradually add the ice water to the mixture, a tablespoon at a time, and mix until the dough comes together in a ball. Be careful not to overwork the dough. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  • Roll out the chilled dough on a floured surface until it is about 1/4-inch thick. Transfer the dough to a 9-inch pie dish, pressing it into the bottom and sides. Trim any excess dough from the edges.
  • In a separate mixing bowl, whisk together the eggs, milk, salt, and pepper. Stir in the chopped vegetables, cheese, and meat (if using) until well combined.
  • Pour the egg mixture into the prepared crust.
  • Bake the pie for 30-40 minutes, or until the filling is set and the crust is golden brown. You can test the filling by inserting a knife into the center of the pie – if it comes out clean, the filling is done.
  • Let the pie cool for 5-10 minutes before slicing and serving.

Tips:

  • If the crust is browning too quickly, you can cover the edges with aluminum foil to prevent burning.
  • You can also brush the crust with egg wash (1 egg beaten with 1 tablespoon water) before baking to give it a shiny finish.
