For the pasta:
- 200 g (7 oz) spaghetti or fettuccine
- Salt (for pasta water)
For the sauce:
- 2 large egg yolks
- 1 whole egg
- 1 tbsp white or red miso paste (white miso for milder flavor, red for deeper umami)
- ½ cup grated Parmesan [ Halal Certified ]
- 1 tbsp chili oil or ½ tsp chili flakes (adjust to heat level)
- 1 tbsp butter
- 100 g (3.5 oz) beef bacon or halal chicken sausage (thinly sliced)
- 2 cloves garlic, minced
- ¼ cup pasta water (reserved)
- Freshly ground black pepper

- Boil the pasta:
Bring a large pot of salted water to a boil. Add pasta and cook until al dente. Reserve about ½ cup of the starchy water, then drain. - Prepare the sauce base:
In a bowl, whisk together egg yolks, egg, miso paste, and grated cheese until smooth. Add a spoonful of hot pasta water to loosen the mixture slightly. - Cook the meat and garlic:
In a pan, melt butter over medium heat. Add bacon or sausage and cook until crispy. Add minced garlic and chili flakes (or chili oil). Sauté until fragrant (about 30 seconds). - Combine pasta and sauce:
Add cooked pasta to the pan. Toss well so it absorbs the chili oil and fat. Turn off the heat — this step is key to preventing scrambling the eggs. - Add the egg-miso mixture:
Pour the egg-miso sauce over the warm pasta, stirring quickly to create a creamy, glossy coating. Add a bit of reserved pasta water as needed to adjust consistency. - Season and serve:
Finish with a sprinkle of cheese, black pepper, and an extra drizzle of chili oil. Garnish with chopped spring onions or seaweed flakes if desired.
