Mango Pickle

Ingredients:

  • Raw mangoes
  • Salt
  • Turmeric powder
  • Red chili powder
  • Mustard seeds
  • Fenugreek seeds
  • Asafoetida (hing)
  • Oil

Instructions:

  1. Wash and dry raw mangoes.
  2. Cut mangoes into small pieces.
  3. Mix mango pieces with salt and turmeric powder.
  4. Sun-dry the mango pieces for a day.
  5. Roast mustard seeds and fenugreek seeds.
  6. Grind the roasted seeds into a powder.
  7. Heat oil in a pan, add asafoetida.
  8. Add the ground seed powder and red chili powder to the oil.
  9. Allow the oil mixture to cool.
  10. Mix the oil mixture with the sun-dried mango pieces.
  11. Store the pickle in a clean, dry jar.
  12. Let the pickle mature for a few days before consuming.
