Ingredients:
- 1/2 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 1/4 cup cornstarch
- 1/8 teaspoon salt
- 2 3/4 cups whole milk
- 4 ounces semi-sweet chocolate, chopped
- 1 teaspoon vanilla extract
Instructions:
- In a medium saucepan, whisk together the sugar, cocoa powder, cornstarch, and salt until well combined.
- Gradually whisk in the milk until smooth and no lumps remain.
- Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and comes to a gentle boil, about 8-10 minutes.
- Remove the saucepan from the heat and add the chopped chocolate and vanilla extract. Stir until the chocolate is completely melted and the pudding is smooth and well combined.
- If you prefer a smoother texture, you can strain the pudding through a fine-mesh sieve to remove any lumps.
- Pour the pudding into individual serving dishes or one large bowl.
- Place a piece of plastic wrap directly on the surface of the pudding to prevent a skin from forming.
- Chill the pudding in the refrigerator for at least 2 hours, or until set.
- Serve the chocolate pudding chilled, topped with whipped cream or fresh berries if desired.
